Walnut oil is obtained in two ways: cold and thermal. The first method allows you to preserve the healing properties of the product and is preferred, albeit more expensive.

For cold pressing, the cores are placed in a press, the extracted oil is filtered or sedimented. It is believed that only a wooden press should be used for the oil extraction process, because the oil deteriorates from contact with metal. As far as we know, serious studies confirming or disproving this statement have not been carried out, but one well-known Russian producer of cedar oil has used this theory so widely in its advertising that high-quality cedar oil is now associated with a large number of consumers only with a wooden press.

Industrial presses are usually metal. The cycle consists of loading, spinning and unloading, the cycle time is 20-30 minutes. The oil yield depends on the moisture content of the core and is 30-40 percent. The cost of the press is from 110 to 330 thousand rubles.

Thermal oil production is a washing with hot water of heated kernels, and then hot pressing. As we noted above, pine nuts lose most of their unique properties during heat treatment. Hot-pressed oil is cheaper and used in cooking.

According to GOST, the oil should have a taste and smell with a slight smack of walnut. Bitter taste and any extraneous tastes and smells are not allowed. The color of the oil is golden yellow, the oil is transparent, the presence of a grid over the sediment and slight turbidity is allowed.
